Keto Lemon Caper Chicken in the Air Fryer
Juicy chicken with a crispy air-fried finish, topped with a bright lemon caper sauce. A quick, low-carb dinner that’s full of fresh flavor and stylish.
Ingredients
3 large chicken breasts sliced in half to make 6
1 cup breadcrumbs
11/2 cups grated parmigiana cheese
2 eggs
Avocado oil in spray bottle
2 small lemons
1cup chicken broth
1 3.5 oz jar capers drained
2 tb butter
1/2 cup dry white wine (optional)
fresh or dried basil to taste
salt and any other herbs you love to taste
Directions
Step 1
Crack eggs in one small bowl and place breadcrumbs and cheese in the other
Step 2
Coat chicken breasts first in egg then in crumb mixture add to air fryer. Spray avocado oil on top of chicken
Step 3
Cook on air fry setting at 370 for 10 minutes. Check temp of chicken, it will need to be 165 degrees when it's done. Turn chicken over and spray with oil. Reset air fry to 370 degrees for another 7-10 minutes depending on thickness of your chicken breasts
Step 4
Meanwhile in a medium saucepan add lemon juice, chicken broth, wine if desired, butter, capers and seasoning. Simmer to reduce.
Step 4
Double check chicken to be sure it is done.
Serve with salad of your choice we like the one in the picture (but full disclosure it's not keto, too much sugar) or veggie (broccoli)
