Chicken “Noodle” Soup  (Instant Pot)

"Comfort in a bowl this nourishing keto-friendly chicken noodle soup is quick to make in the Instant Pot and perfect for cozy, healing nights."

Ingredients

  • 1 white onion, finely chopped

  • 2 tb butter

  • 1 bag carrots, chopped

  • 1 celery bunch, chopped

  • 5 medium yellow potatoes, chopped

  • 2 tsp dried thyme

  • 2 tb dried basil

  • 2 tb garlic powder

  • 1 tsp sage

  • salt & pepper to taste

  • 1 poultry fresh herb package (in salad section)

  • 1 32oz (4 cups) chicken broth
  • 4 cups hot water

  • 1 bag egg noodles cooked

  • 1 rotisserie chicken cut in small pieces

Directions

Step 1

Sauté onion in the butter in the instant sauté setting till golden

Step 2

Add carrots, celery, potatoes in that order

Step 3

Add all the seasonings including herb package on top of potatoes

Step 4

Next gently pour in the chicken broth and the hot water (it should be right below the fill line)

Step 5

Secure the lid add lock it (I put a potholder on top, so the steam does not ruin my kitchen cabinets)

Step 6

Set the instant pot to the soup setting for 7 minutes

Step 7

Let it slow release for 10 minutes, remove herb stems and leaves, you can add more seasoning if desired (I usually add some garlic salt and tarragon) then add chicken and noodles to desired amount - let warm for 5 to 10 minutes to coagulate 

Put the soup in a fun mug or bowl and enjoy! Happy eating.
